Keto Chocolate Berry Yoghurt Pops

Creamy, Chocolatey & Low Carb Creamy Greek yoghurt, juicy raspberries, and a crisp chocolate coating come together in these easy yoghurt pops. They're simple to make, naturally creamy, and perfect when you want a sweet low-carb treat without the added sugar. Makes 6-8 pops.

Ingredients

  • 400 g / 14.1oz full-fat Greek yoghurt unsweetened
  • 2 tbsp powdered erythritol or monk fruit sweetener
  • 1 tbsp vanilla extract
  • 200 g / 7oz raspberries
  • 400 g / 14.1oz sugar-free dark chocolate
  • 1 handful freeze-dried raspberries crushed

Equipment

  • 6-8 ice cream sticks

Method

  1. Mix the Greek yoghurt, sweetener, and vanilla extract until smooth and creamy
  2. Gently fold the raspberries into the yoghurt mixture
  3. Line a board or baking tray with baking paper
  4. Spoon around 2 tbsp of the yoghurt mixture onto the baking paper and spread into small circles
  5. Place an ice cream stick in the centre of each pop and cover it with a little extra yoghurt mixture to hold it in place
  6. Freeze for 2-3 hours, or until completely frozen
  7. Melt the sugar-free dark chocolate over a bain-marie until smooth
  8. Dip each frozen yoghurt pop into the melted chocolate, or spoon the chocolate over the top
  9. Immediately sprinkle with crushed freeze-dried raspberries while the chocolate is still melted
  10. Enjoy straight away or return to the freezer to set
  11. Let the pops sit at room temperature for around 10-15 minutes before eating for the best texture

Notes

Pro tip: Work quickly when dipping and sprinkle the freeze-dried raspberries right away, because the chocolate sets fast on frozen pops and the topping won't stick once it hardens.
Macros (approx. per pop): 340 kcal | 5 g protein | 25 g fat | 16 g net carbs
Macros (approx. for all 8 pops): 2,720 kcal | 40 g protein | 200 g fat | 128 g net carbs
Storage: Store the pops in an airtight container in the freezer for up to 2 months, with a sheet of baking paper between them so they don't stick together.
Can I use a different yoghurt? Unsweetened coconut yoghurt works as a dairy-free swap, though the pops will be slightly softer, so freeze them a little longer.
Note: Nutritional values are estimates and may vary depending on the specific brands and quantities used, especially the sugar-free dark chocolate, Greek yoghurt, and sweetener. The actual macros per pop will also depend on how much of the melted chocolate sticks to each pop, as some chocolate may be left over after coating.
