Keto High Protein Bread

Rich, Filling & Endlessly Versatile This high-protein keto bread is rich, filling, and easy to turn into toast, sandwiches, or French toast. A great option if you're watching carbs, working toward weight loss, or looking for meals that help keep blood sugar and energy more steady. This recipe makes 1 loaf.

Ingredients

  • 4 eggs room temperature
  • 1 stick butter room temperature
  • 1 cup egg white powder
  • 2 tsp unflavored beef gelatin
  • 12 oz 340g cream cheese, room temperature
Optional
  • ½ tsp baking soda
  • 2 tsp baking powder
  • ½ tsp cream of tartar

Method

  1. Preheat the oven to 160°C (320°F)
  2. Add the room-temperature eggs to a large bowl
  3. Add the cream cheese and softened butter, and whisk until creamy and smooth
  4. Add the egg white powder and gelatin, and mix very well until fully combined
  5. Add the baking soda, baking powder, and cream of tartar if using, and whisk until smooth
  6. Line a 9×5-inch loaf pan with parchment paper and lightly grease it
  7. Pour the mixture into the pan and bake for 45–55 minutes, starting to check at 45 minutes
  8. Remove from the pan and let the bread cool completely before slicing
  9. Toast or air-fry the slices for extra crispiness, or use them to make French toast

Notes

Pro tip: Let the loaf cool completely before slicing — cutting it warm can make it dense and gummy instead of holding its structure.
Macros (approx. for the whole loaf): 2,600 kcal | 117 g protein | 150 g fat | 22 g net carbs
Storage: Store sliced in an airtight container in the fridge for up to a week, or freeze slices for longer storage and toast straight from frozen.
Can I skip the optional ingredients? Yes, the bread will still work without baking soda, baking powder, or cream of tartar, though the texture will be slightly denser.
