Keto High Protein Cheesy Zucchini Rolls

Low Carb, Cheesy & Weight Loss Friendly Golden, cheesy, and packed with protein, these zucchini rolls are a delicious low-carb way to enjoy your favourite comfort food. With a soft zucchini base, melted cheese, and ham in every bite, even zucchini skeptics might be convinced. Makes 3–4 servings.

Ingredients

  • 3 zucchini
  • 3 eggs
  • 80 g / 2.8oz grated mozzarella
  • Cheese slices of your choice
  • Ham slices
  • Extra grated mozzarella
  • Salt & pepper

Method

  1. Preheat the oven to 180°C / 356°F
  2. Grate the zucchini and squeeze out as much liquid as possible using a clean cloth or kitchen towel
  3. Add the zucchini to a bowl with the eggs, grated mozzarella, salt, and pepper, and mix well
  4. Spread the mixture evenly over a parchment-lined baking tray
  5. Bake for 20–25 minutes, until the zucchini sheet is set and lightly golden
  6. Remove from the oven, carefully flip the zucchini sheet upside down, and peel away the parchment paper
  7. Layer with cheese slices, ham, and a little extra grated mozzarella
  8. Roll the zucchini sheet tightly into a log and return it to the oven for about 10 minutes, until the cheese is melted and the outside is lightly golden
  9. Slice and serve warm

Notes

Pro tip: Squeeze the grated zucchini really well before mixing — leftover moisture is the main reason the base ends up soft instead of holding together for rolling.

Storage: Store leftovers in an airtight container in the fridge for up to 3–4 days. Reheat in the oven to help it re-crisp rather than using the microwave.
Can I skip the ham? Yes, you can leave it out or swap in turkey slices for a similar texture with less sodium.
Note: Nutritional values are estimates and may vary depending on the specific brands and quantities of ingredients used, especially the cheese and ham. This calculation assumes 4 servings.
